One of my favourite things to make with foraged nettles is Nettle Crisps. Here’s my recipe:

  • Collect some nettles ( wearing plastic gloves)
  • Rinse them well
  • Blanch them in boiling water for a minute to get rid of the strings
  • drain and squeeze out in a tea towel
  • Brush a baking tray with Olive Oil
  • Carefully smooth/flatten out the Nettles onto the baking tray
  • Brush with a little more Olive oil on top
  • Sprinkle with sea salt
  • Bake in a hot oven for 3-5 mins

Be careful not to over bake as they will incinerate. I often make nettle crisps when I have the oven on for something else

They are light, crispy and full of goodness. nettle really is a super food.
