One of my favourite things to make with foraged nettles is Nettle Crisps. Here’s my recipe:
- Collect some nettles ( wearing plastic gloves)
- Rinse them well
- Blanch them in boiling water for a minute to get rid of the strings
- drain and squeeze out in a tea towel
- Brush a baking tray with Olive Oil
- Carefully smooth/flatten out the Nettles onto the baking tray
- Brush with a little more Olive oil on top
- Sprinkle with sea salt
- Bake in a hot oven for 3-5 mins
Be careful not to over bake as they will incinerate. I often make nettle crisps when I have the oven on for something else
They are light, crispy and full of goodness. nettle really is a super food.
